onions - diced
garlic - crushed
carrots ( lots ) - peeled and coarsely grated
courgettes - scrubbed and diced
celery - scrubbed and sliced thinly
peppers - lots of colours, washed and diced
tins of chopped tomatoes
bunch of fresh herbs - tarragon, parsley, marjoram, rosemary, or a pinch
or two of mixed dried
Extra-virgin olive oil
Heat the oil, fry the onions till softening, add garlic and fry a little longer then add all the remaining ingredients - put in enough tinned tomatoes to give a sloppy mixture. Stir well into onion and oil, put on a lid allow to simmer till the vegetables reach the softness you like.
Meanwhile, make the Cheese Sauce
- butter, melt in a large pan
- wholemeal flour, add to melted butter and stir to make a roux
- milk, add slowly blending in well, add enough to make a thin sauce
- grated strong cheddar, add enough to taste delicious
- wholegrain mustard, we add a teaspoon or two
Pour a little of the vegetables into the bottom of a lasagne dish, cover with wholemeal lasagne sheets, more veg, cheese sauce, lasagne, veg, sauce. Cook in oven till lasagne sheets are cooked. On special occasions we have it with Roast Potatoes!!
